La Note Bleue would not be what it is without the know-how and inventiveness of our chef Laurent Paya. 

Since 2002, Laurent has kept evolving from an influence to another, keeping strong roots in the Mediterranean savoir faire while bringing in other flavors from various cuisines of the world. Thanks to his subtle associations of flavors, his passion for proposing new dishes and his originality, Laurent Paya has made La Note Bleue an institution in Monaco.
